About processor: Lost Origin Coffee Lab was founded by craft brewer Franz Zeimetz, who applies his brewing expertise to coffee fermentation. The lab is equipped with custom fermentation tanks, drying rooms, and a dedicated microbiology team to ensure strict control of the fermentation process. About process:Fermentation was carried out in custom-built stainless steel tanks, guided by LOY-007P. A fermentation medium (LOM-111) was used at a volume of 53 liters, representing a 16% concentration. The process lasted 5.9 days under controlled conditions in an average temperature of 14.66°C. The coffee was dried over 12.5 days in temperature and humidity-regulated drying rooms. |
